  • 100g (3.5oz) Snap Peas, trimmed
  • 3 Cloves Garlic, minced
  • 1 Tbsp (15g) Fresh Ginger, grated
  • 3 Tbsp (45ml) Halal Mushroom Soy Sauce
  • 1 Tbsp (15ml) Halal Mushroom Soy Sauce (for sauce)
  • 1 tsp (5ml) Sesame Oil
  • 3 Tbsp (45ml) Smooth Natural Peanut Butter
  • 120ml (ยฝ cup) Coconut Milk
  • 2 Tbsp (30ml) Fresh Lime Juice
  • 1 tsp (5g) Lime Zest
  • 1 tsp (5ml) Chili Paste (halal)
  • 1 Tbsp (15ml) Honey
  • 1 tsp (5ml) Rice Vinegar
  • 1 Tbsp (15g) Toasted Coconut Flakes
  • 2 Tbsp (8g) Chopped Fresh Cilantro
  • 1 tsp (5g) Toasted Sesame Seeds

Instructions

  1. Cook Noodles: Boil noodles until *al dente*, drain, and rinse.
  2. Make Sauce: Whisk peanut butter, coconut milk, lime juice, zest, chili paste, honey, soy sauce, and vinegar until smooth.
  3. Stir-Fry Chicken: Stir-fry chicken until cooked through, then set aside.
  4. Sautรฉ Aromatics: Sautรฉ garlic and ginger until fragrant.
  5. Cook Vegetables: Stir-fry carrot, bell pepper, and snap peas until crisp-tender.
  6. Combine: Return chicken to wok with vegetables, soy sauce, and sesame oil.
  7. Add Noodles & Sauce: Add noodles and sauce, tossing to coat evenly.
