  • 1 cup (150g) frozen peas and carrots
  • 2 large eggs
  • 2 Tbsp (30ml) vegetable oil
  • 2 Tbsp (30ml) light soy sauce
  • 1 Tbsp (15ml) oyster sauce
  • 1 tsp (5ml) sesame oil
  • 1 tsp (5g) ground turmeric
  • ยฝ tsp (2.5g) ground white pepper
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • ยผ cup (15g) fresh cilantro, chopped
  • 2 Tbsp (30g) plain Greek yogurt
  • 1 Tbsp (15ml) fresh lime juice
  • 1 Tbsp (15g) toasted sesame seeds
  • 1 Tbsp (15g) crispy fried shallots (optional)

Instructions

  1. Prepare Rice: Use day-old jasmine rice for best texture.
  2. Make Crema: Whisk yogurt, lime juice, and cilantro.
  3. Sautรฉ Aromatics: Stir-fry onion and garlic until fragrant.
  4. Cook Chicken: Add chicken and stir-fry until browned.
  5. Scramble Eggs: Scramble eggs and mix with chicken.
  6. Add Rice & Seasonings: Stir-fry rice with turmeric, soy sauce, oyster sauce, sesame oil, and pepper.
  7. Incorporate Veggies: Add peas and carrots during the last minutes.
  8. Finish with Crema: Gently fold in half of the crema.
  9. Plate & Garnish: Serve with remaining crema, sesame seeds, and cilantro.
