  • 1 tsp Dried Oregano
  • 1 tsp Smoked Paprika
  • ยฝ tsp Ground Cumin
  • Salt and Pepper, to taste
  • Zest of 1 Lemon
  • Juice of ยฝ Lemon (โ‰ˆ1 Tbsp / 15 ml)
  • 120 g (ยฝ cup) Plain Full-Fat Greek Yogurt
  • 1 Tbsp Fresh Mint, chopped
  • 2 Tbsp Pine Nuts, toasted
  • 1 tsp Extra-Virgin Olive Oil (for finishing)

Instructions

  1. Sautรฉ Vegetables: Heat olive oil in a skillet over medium-high heat. Sautรฉ onion and bell pepper for 4-5 minutes until slightly caramelized.
  2. Bloom Garlic: Add minced garlic and cook for 30 seconds until fragrant.
  3. Brown Chicken: Add ground chicken and cook for 6-8 minutes, breaking it up, until browned and cooked through.
  4. Season Chicken: Season with oregano, smoked paprika, cumin, salt, and pepper.
  5. Add Olives & Lemon: Fold in olives, lemon zest, and lemon juice. Cook for 2 minutes.
  6. Swirl in Yogurt: Remove from heat and swirl in Greek yogurt.
  7. Garnish & Serve: Top with feta, pine nuts, and mint. Drizzle with olive oil and serve immediately.
