  • 5g (1 tsp) Smoked Paprika
  • 2g (ยฝ tsp) Chipotle Powder
  • 30ml (2 Tbsp) Olive Oil
  • 1L (4 cups) Chicken Stock
  • 400g (14oz) Diced Tomatoes: drained
  • 200g (1 cup) Corn: thawed
  • 240ml (1 cup) Heavy Cream: divided
  • 30ml (2 Tbsp) Lime Juice
  • 1 tsp Lime Zest
  • Salt and Pepper: to taste
  • 100g (3.5oz) Tortilla Chips: crushed
  • 15g (0.5oz) Cilantro: chopped
  • 1 Avocado: diced (optional)

Instructions

  1. Sautรฉ Vegetables: Sautรฉ onion, carrots, and celery in olive oil until softened.
  2. Brown Chicken & Bloom Spices: Add garlic, then chicken; brown. Toast cumin, paprika, and chipotle powder.
  3. Simmer Soup: Add stock, tomatoes, and corn; simmer until chicken is tender.
  4. Make Crema: Combine cream, chipotle powder, lime zest, and salt; whisk until thickened.
  5. Finish & Season: Stir in remaining cream and lime juice; heat through.
  6. Serve & Garnish: Ladle into bowls; drizzle with crema, top with chips and cilantro.
