Ingredients
- 500g (1.1lb) Chicken Thighs: cut into bite-sized pieces
- 150g (5oz) Onion: diced
- 2 Cloves Garlic: minced
- 120g (4oz) Carrots: diced
- 80g (3oz) Celery: diced
- 5g (1 tsp) Ground Cumin
- 5g (1 tsp) Smoked Paprika
- 2g (ยฝ tsp) Chipotle Powder
- 30ml (2 Tbsp) Olive Oil
- 1L (4 cups) Chicken Stock
- 400g (14oz) Diced Tomatoes: drained
- 200g (1 cup) Corn: thawed
- 240ml (1 cup) Heavy Cream: divided
- 30ml (2 Tbsp) Lime Juice
- 1 tsp Lime Zest
- Salt and Pepper: to taste
- 100g (3.5oz) Tortilla Chips: crushed
- 15g (0.5oz) Cilantro: chopped
- 1 Avocado: diced (optional)
Instructions
- Sautรฉ Vegetables: Sautรฉ onion, carrots, and celery in olive oil until softened.
- Brown Chicken & Bloom Spices: Add garlic, then chicken; brown. Toast cumin, paprika, and chipotle powder.
- Simmer Soup: Add stock, tomatoes, and corn; simmer until chicken is tender.
- Make Crema: Combine cream, chipotle powder, lime zest, and salt; whisk until thickened.
- Finish & Season: Stir in remaining cream and lime juice; heat through.
- Serve & Garnish: Ladle into bowls; drizzle with crema, top with chips and cilantro.
Notes
For a lighter soup, use half-and-half or coconut milk instead of heavy cream. Adjust chipotle powder to control spice level.
