Ingredients
- 4 chicken thighs (bone-in, skin-on, 800g)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 0.5 tsp ground cumin
- 2 cloves garlic, minced
- Salt and pepper to taste
- 0.5 cup low-sodium chicken broth
- 0.25 cup pomegranate molasses
- 2 tbsp lemon juice
- 1 tbsp honey
- 2 tbsp fresh mint, chopped
- 2 tbsp toasted pine nuts
- 0.5 lemon zest (optional)
Instructions
- Season Chicken: Combine spices and season chicken thighs.
- Sear Chicken: Sear chicken skin-side down for 5-6 minutes, then flip and sear for 3-4 minutes.
- Sautรฉ & Deglaze: Sautรฉ garlic, then deglaze pan with chicken broth.
- Make Glaze: Simmer pomegranate molasses, lemon juice, and honey.
- Glaze & Bake: Return chicken to pan, glaze, and bake for 10-12 minutes.
- Caramelize: Baste with remaining glaze and cook uncovered for 2-3 minutes.
- Garnish & Serve: Sprinkle with mint and pine nuts; serve immediately.
