Ingredients
- 500g ground beef, lean
- 150g onion, diced
- 120g carrots, diced
- 80g celery, diced
- 2 cloves garlic, minced
- 150g frozen peas
- 150g frozen corn
- 30ml tomato paste
- 250ml halal beef broth
- 15ml halal soy sauce
- 5ml halal Worcestershire sauce
- 5ml dried thyme
- 5ml dried rosemary
- Salt and pepper to taste
- 500g potatoes, cubed
- 300g sweet potatoes, cubed
- 60g butter
- 120ml milk or plant milk
- 120g roasted red pepper puree
- 5ml smoked paprika
- 150g sharp cheddar cheese, grated
- 30g butter for browning
- 5ml fresh thyme leaves
- 8g fresh parsley, chopped
- Extra-virgin olive oil (optional)
Instructions
- Prep & Preheat: Preheat oven to 200ยฐC (400ยฐF) and grease a baking dish.
- Brown the Beef: Cook ground beef until browned, seasoning with salt and pepper.
- Sautรฉ Aromatics: Sautรฉ onion, carrots, and celery until softened, then add garlic.
- Combine & Simmer: Return beef to skillet, add tomato paste, broth, soy sauce, Worcestershire sauce, thyme, and rosemary. Simmer for 10 minutes.
- Add Vegetables: Stir in peas and corn during the last few minutes of simmering.
- Assemble Base: Spread meat mixture in the baking dish.
- Prepare Mash: Boil potatoes and sweet potatoes until tender, then drain.
- Flavor Mash: Mash potatoes with butter, milk, red pepper puree, smoked paprika, salt, and pepper.
- Top & Cheese: Spread mash over meat layer and sprinkle with cheddar cheese.
- Bake: Bake for 25-30 minutes, until cheese is melted and bubbly.
- Brown Butter: Melt butter with thyme until browned.
- Rest & Serve: Let rest for 5 minutes, drizzle with browned butter, and garnish with parsley.
