- 2 tbsp (30g) unsalted butter, melted
- 1 tsp (5g) salt
- ยฝ tsp (2g) ground black pepper
- 2 jalapeรฑos, seeded and diced
- 1 lime, zested and 2 tbsp (30ml) juiced
- ยผ cup (60g) extra cream cheese, softened
- 1 tsp (5g) smoked paprika
- 1 tbsp (15ml) honey
- ยฝ cup (60g) panko breadcrumbs
- 1 tbsp (14g) unsalted butter, melted (for topping)
- 2 tbsp (8g) fresh cilantro, chopped
- 1 tsp (5ml) lime-infused olive oil
Instructions
- Preheat and Prep: Preheat oven to 375ยฐF (190ยฐC) and grease a 9×13 inch baking dish.
- Combine Base: Mix corn, cream cheese, cheddar, Parmesan, eggs, cream, milk, butter, salt, and pepper.
- Make Swirl: Blend cream cheese, jalapeรฑos, lime zest, juice, paprika, and honey.
- Swirl Flavors: Pour corn mixture into dish, drop swirl mixture on top, and gently swirl.
- Add Topping: Combine panko, butter, and cilantro; sprinkle over casserole.
- Bake: Bake for 30-35 minutes, until golden brown and set.
- Rest and Serve: Let rest for 5 minutes, drizzle with olive oil, and garnish with cilantro.
