  • 1 lime, zested and 2 tbsp (30ml) juiced
  • ยผ cup (60g) extra cream cheese, softened
  • 1 tsp (5g) smoked paprika
  • 1 tbsp (15ml) honey
  • ยฝ cup (60g) panko breadcrumbs
  • 1 tbsp (14g) unsalted butter, melted (for topping)
  • 2 tbsp (8g) fresh cilantro, chopped
  • 1 tsp (5ml) lime-infused olive oil

Instructions

  1. Preheat and Prep: Preheat oven to 375ยฐF (190ยฐC) and grease a 9×13 inch baking dish.
  2. Combine Base: Mix corn, cream cheese, cheddar, Parmesan, eggs, cream, milk, butter, salt, and pepper.
  3. Make Swirl: Blend cream cheese, jalapeรฑos, lime zest, juice, paprika, and honey.
  4. Swirl Flavors: Pour corn mixture into dish, drop swirl mixture on top, and gently swirl.
  5. Add Topping: Combine panko, butter, and cilantro; sprinkle over casserole.
  6. Bake: Bake for 30-35 minutes, until golden brown and set.
