  • 150 g (1 cup) sharp cheddar cheese, grated
  • 1 tsp (5 g) smoked paprika
  • 300 g (10-oz) onions, thinly sliced
  • 1 tsp (5 g) granulated sugar
  • 1 tsp (5 g) kosher salt, plus more for potatoes
  • ยฝ tsp (2 g) black pepper
  • 2 tsp (10 ml) olive oil
  • Fresh thyme sprigs, for garnish

Instructions

  1. Preheat and Prep: Preheat oven to 190ยฐC (375ยฐF) and grease a baking dish.
  2. Caramelize Onions: Sautรฉ onions with butter and sugar for 20-25 minutes until golden brown.
  3. Make Smoked Cream: Melt butter, whisk in flour, then milk and cream. Simmer until thickened, add paprika, salt, pepper, and half the onions.
  4. Assemble Dish: Layer potatoes and cream sauce in the baking dish.
  5. Add Cheese and Bake: Top with cheese and bake for 30 minutes.
  6. Cover and Bake: Cover with foil and bake for 20 minutes.
  7. Brown and Rest: Remove foil, bake 10-15 minutes, and rest for 10 minutes.
  8. Garnish and Serve: Garnish with thyme and serve.
