- 1.2 kg (2.6 lb) Yukon Gold potatoes, thinly sliced
- 30 g (2 Tbsp) unsalted butter, divided
- 30 g (ยผ cup) all-purpose flour
- 500 ml (2 cups) whole milk
- 250 ml (1 cup) heavy cream
- 150 g (1 cup) sharp cheddar cheese, grated
- 1 tsp (5 g) smoked paprika
- 300 g (10-oz) onions, thinly sliced
- 1 tsp (5 g) granulated sugar
- 1 tsp (5 g) kosher salt, plus more for potatoes
- ยฝ tsp (2 g) black pepper
- 2 tsp (10 ml) olive oil
- Fresh thyme sprigs, for garnish
Instructions
- Preheat and Prep: Preheat oven to 190ยฐC (375ยฐF) and grease a baking dish.
- Caramelize Onions: Sautรฉ onions with butter and sugar for 20-25 minutes until golden brown.
- Make Smoked Cream: Melt butter, whisk in flour, then milk and cream. Simmer until thickened, add paprika, salt, pepper, and half the onions.
- Assemble Dish: Layer potatoes and cream sauce in the baking dish.
- Add Cheese and Bake: Top with cheese and bake for 30 minutes.
- Cover and Bake: Cover with foil and bake for 20 minutes.
- Brown and Rest: Remove foil, bake 10-15 minutes, and rest for 10 minutes.
- Garnish and Serve: Garnish with thyme and serve.
Notes
For best results, use Yukon Gold potatoes and high-quality smoked paprika. Caramelizing the onions slowly is key to developing their sweetness.
