Description

- 200g (7oz) Cottage Cheese, Smooth
- 4 Large Eggs
- 60g (1/4 cup) Cream Cheese, Softened
- 2 Tbsp (30ml) Milk
- 1 Tbsp (15ml) Lemon Juice, Fresh
- 1 tsp Lemon Zest
- 2 Tbsp (30g) Dill, Fresh, Chopped
- 1 Tbsp (15g) Chives, Fresh, Chopped
- ยฝ tsp Salt
- ยผ tsp Black Pepper
- 1 Tbsp (15ml) Olive Oil
- Optional: Red Pepper Flakes
- Optional: Extra Chives for Garnish
Instructions
- Preheat and Prep: Preheat oven to 180ยฐC (350ยฐF) and grease a muffin tin.
- Blend Cottage Cheese: Blend cottage cheese until smooth.
- Combine Base: Whisk cottage cheese, eggs, salt, pepper, and optional flakes.
- Make Swirl: Combine cream cheese, lemon juice, zest, dill, chives, and milk.
- Assemble Bites: Spoon egg mixture into muffin cups, then add swirl.
- Create Swirl: Gently cover swirl with remaining egg mixture.
- Bake: Bake for 20-22 minutes, until set.
- Rest & Release: Let rest for 5 minutes, then loosen and remove.
- Garnish & Serve: Garnish with chives and serve warm.
