  • 4 Large Eggs
  • 60g (1/4 cup) Cream Cheese, Softened
  • 2 Tbsp (30ml) Milk
  • 1 Tbsp (15ml) Lemon Juice, Fresh
  • 1 tsp Lemon Zest
  • 2 Tbsp (30g) Dill, Fresh, Chopped
  • 1 Tbsp (15g) Chives, Fresh, Chopped
  • ยฝ tsp Salt
  • ยผ tsp Black Pepper
  • 1 Tbsp (15ml) Olive Oil
  • Optional: Red Pepper Flakes
  • Optional: Extra Chives for Garnish

Instructions

  1. Preheat and Prep: Preheat oven to 180ยฐC (350ยฐF) and grease a muffin tin.
  2. Blend Cottage Cheese: Blend cottage cheese until smooth.
  3. Combine Base: Whisk cottage cheese, eggs, salt, pepper, and optional flakes.
  4. Make Swirl: Combine cream cheese, lemon juice, zest, dill, chives, and milk.
  5. Assemble Bites: Spoon egg mixture into muffin cups, then add swirl.
  6. Create Swirl: Gently cover swirl with remaining egg mixture.
  7. Bake: Bake for 20-22 minutes, until set.
  8. Rest & Release: Let rest for 5 minutes, then loosen and remove.
  9. Garnish & Serve: Garnish with chives and serve warm.
