- 450g Potatoes, peeled and grated, drained well
- 75g Parmesan Cheese, grated
- 10ml Olive Oil
- 4g Salt
- 2g Black Pepper
- 2 Cloves Garlic, minced
- 10g Rosemary, chopped
- 75g Goat Cheese, softened
- 20ml Heavy Cream
- 1g Lemon Zest
- 10ml Lemon Juice
- 4g Thyme Leaves
- 10g Butter
- 6g All-Purpose Flour
- 120ml Vegetable Broth
- 3ml Lemon Juice (for sauce)
- 1g Chives, chopped
- 1g Lemon Zest (for garnish)
Instructions
- Preheat & Prep: Preheat oven to 200ยฐC (400ยฐF) and grease a muffin tin.
- Dehydrate Potatoes: Squeeze excess moisture from grated potatoes.
- Flavor Potatoes: Combine potatoes, Parmesan, olive oil, salt, pepper, garlic, and rosemary.
- Make Goat Cheese: Blend goat cheese, cream, lemon zest, lemon juice, and thyme.
- Layer Stacks: Spoon potato mixture into muffin cups, add goat cheese, and top with more potato mixture.
- Bake to Golden: Bake for 25-30 minutes, until golden brown and crisp.
- Rest & Release: Cool for 5 minutes before removing from tin.
- Make Sauce: Melt butter, whisk in flour, then broth; simmer until thickened.
- Finish Sauce: Stir in lemon juice, thyme, and season.
- Garnish & Serve: Loosen stacks, drizzle with sauce, and garnish with chives and lemon zest.
