Description

  • 120ml (ยฝ cup) Whole Milk
  • 80ml (โ…“ cup) Melted Unsalted Butter
  • 1 Large Egg, room temperature
  • 1 tsp Vanilla Extract
  • 150g (1 cup) Fresh Blueberries, rinsed and dried
  • 100g (3ยฝ oz) Cream Cheese, softened
  • 30g (2 tbsp) Powdered Sugar (for swirl)
  • Zest of 1 Lemon (about 1 tsp)
  • 1 tsp Lemon Juice (for swirl)
  • 30g (2 tbsp) Powdered Sugar (for glaze)
  • 1 tsp Lemon Juice (for glaze)
  • 15g (1 tbsp) Toasted Almond Slivers, for garnish
  • A few extra fresh blueberries, for garnish

Instructions

  1. Preheat & Prepare: Preheat oven to 180ยฐC (350ยฐF) and line a muffin tin with liners.
  2. Combine Dry Ingredients: Whisk flour, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: Beat milk, melted butter, egg, and vanilla extract.
  4. Combine Wet & Dry: Gently stir wet into dry ingredients until just combined.
  5. Fold in Blueberries: Gently fold in blueberries.
  6. Prepare Cream Cheese Swirl: Beat cream cheese, powdered sugar, lemon zest, and lemon juice.
  7. Assemble Muffins: Spoon batter into cups, add cream cheese swirl, then top with more batter.
  8. Create Swirl: Gently swirl batters together.
  9. Bake to Perfection: Bake for 20-22 minutes, until a toothpick comes out clean.
  10. Cool & Glaze: Cool in tin for 5 minutes, then on a wire rack; glaze with lemon sugar.
  11. Glaze & Garnish: Drizzle glaze and sprinkle with almonds and blueberries.
