Ingredients
- 8 large eggs
- 400 g (14 oz) black beans, rinsed and drained
- 4 corn tortillas, cut into 2-inch (5 cm) strips
- 200 g (7 oz) shredded cheddar-style cheese
- 1 medium onion, finely diced
- 1 red bell pepper, diced
- 1 jalapeรฑo, seeded and minced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 0.5 tsp smoked paprika
- Salt and black pepper to taste
- 2 Tbsp olive oil
- 120 ml (0.5 cup) sour cream (optional)
- 1 ripe avocado (โ150 g / 5 oz)
- 60 ml (0.25 cup) plain yogurt
- 2 Tbsp fresh cilantro, chopped
- 30 ml (2 Tbsp) lime juice
- 0.5 tsp salt
- Pinch of cayenne pepper (optional)
- Extra cilantro leaves, torn (for garnish)
- Lime zest (for garnish)
Instructions
- Preheat & Prep: Preheat oven to 190ยฐC (375ยฐF) and grease a baking dish.
- Make Crema: Blend avocado, yogurt, cilantro, lime juice, salt, and cayenne until smooth. Chill.
- Sautรฉ Veggies: Sautรฉ onion, bell pepper, jalapeรฑo, and garlic in olive oil until softened.
- Add Spices: Stir in cumin, chili powder, paprika, salt, and pepper.
- Incorporate Beans: Add black beans and cool slightly.
- Whisk Eggs: Whisk eggs until frothy.
- Combine: Fold bean mixture, cheese, and tortillas into eggs.
- Assemble: Pour into baking dish.
- Swirl Crema: Drop crema over the top and swirl gently.
- Add Cheese: Sprinkle with remaining cheese.
- Bake: Bake for 25-30 minutes, until set and golden.
- Rest & Garnish: Rest for 5 minutes, then garnish.
Notes
For a spicier casserole, leave the seeds in the jalapeรฑo or add hot sauce. Assembling the casserole ahead of time is a great time saver.
