  • 1 jalapeรฑo, seeded and minced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 Tbsp olive oil
  • 120 ml (0.5 cup) sour cream (optional)
  • 1 ripe avocado (โ‰ˆ150 g / 5 oz)
  • 60 ml (0.25 cup) plain yogurt
  • 2 Tbsp fresh cilantro, chopped
  • 30 ml (2 Tbsp) lime juice
  • 0.5 tsp salt
  • Pinch of cayenne pepper (optional)
  • Extra cilantro leaves, torn (for garnish)
  • Lime zest (for garnish)

Instructions

  1. Preheat & Prep: Preheat oven to 190ยฐC (375ยฐF) and grease a baking dish.
  2. Make Crema: Blend avocado, yogurt, cilantro, lime juice, salt, and cayenne until smooth. Chill.
  3. Sautรฉ Veggies: Sautรฉ onion, bell pepper, jalapeรฑo, and garlic in olive oil until softened.
  4. Add Spices: Stir in cumin, chili powder, paprika, salt, and pepper.
  5. Incorporate Beans: Add black beans and cool slightly.
  6. Whisk Eggs: Whisk eggs until frothy.
  7. Combine: Fold bean mixture, cheese, and tortillas into eggs.
  8. Assemble: Pour into baking dish.
  9. Swirl Crema: Drop crema over the top and swirl gently.
