  • 30g (2 tbsp) spinach, chopped
  • 150ml (ยฝ cup) heavy cream
  • 1 roasted red bell pepper (100g / ยฝ cup, pureed)
  • 1 tsp (5ml) lemon juice
  • 1 tbsp (15ml) fresh basil, chopped
  • 2 tbsp (15g) pine nuts, toasted

Instructions

  1. Prepare Cod: Season cod with salt, pepper, and paprika; drizzle with oil.
  2. Bake Cod: Bake at 200ยฐC (400ยฐF) for 12-15 minutes, until flaky.
  3. Sautรฉ Aromatics: Sautรฉ onion until translucent, then add garlic until fragrant.
  4. Build Tuscan Sauce: Add tomatoes, olives, and capers; simmer for 5 minutes.
