- 15ml (1 Tbsp) Olive Oil
- 5g (1 tsp) Smoked Paprika
- 2g (ยฝ tsp) Ground Cumin
- Salt and Pepper, to taste
- 185g (1 cup) Cooked Rice, long-grain
- 170g (1 cup) Black Beans, rinsed and drained
- 4 Large (โ80g each) Flour Tortillas
- 60g (ยฝ cup) Cheddar Cheese, shredded
- 60ml (ยผ cup) Ranch Dressing, dairy-based
- 1 Ripe Avocado (โ150g / 5oz)
- 10g (ยผ cup) Cilantro Leaves, fresh
- 30ml (2 Tbsp) Lime Juice, fresh
- 30g (2 Tbsp) Greek Yogurt, plain
- 1 Small Garlic Clove, minced
- 10g (1 Tbsp) Pumpkin Seeds, toasted
- Hot Sauce (Optional)
Instructions
- Prepare Chicken: Heat olive oil in a skillet.
- Season & Sautรฉ: Coat chicken with spices; sautรฉ until cooked through.
- Make Avocado Crema: Blend avocado, cilantro, lime juice, yogurt, and garlic.
- Warm Tortillas: Warm tortillas on a dry skillet.
- Assemble Burritos: Layer ranch, rice, beans, chicken, and cheese on tortillas.
- Add Crema & Roll: Add avocado crema and roll tightly.
- Bake: Bake burritos until golden brown and cheese is melted.
- Rest & Slice: Let rest before slicing diagonally.
