Ingredients
- 200g button mushrooms, sliced 0.5cm thick
- 60g all-purpose flour, seasoned with salt and pepper
- 1 large egg, beaten
- 80g panko breadcrumbs, mixed with 1 tsp smoked paprika, 1 tsp dried thyme, and 0.5 tsp garlic powder
- 500ml vegetable oil, for frying
- 120g mayonnaise
- 120g plain Greek yogurt
- 30ml buttermilk or milk
- 1 tsp dried dill
- 0.5 tsp garlic powder (for ranch)
- 0.5 tsp onion powder
- 0.5 tsp smoked paprika (for ranch)
- 5ml fresh lemon juice
- 6g fresh chives, chopped
Instructions
- Prepare Mushrooms: Clean and slice mushrooms, patting them very dry.
- Set Up Breading: Prepare flour, egg, and panko mixtures.
- Coat Mushrooms: Dredge mushrooms in flour, egg, then panko.
- Fry to Perfection: Fry in 180ยฐC oil for 2-3 minutes, until golden.
- Drain and Cool: Drain on paper towels.
- Make Smoky Ranch: Whisk together ranch ingredients and chill.
- Assemble & Garnish: Serve with ranch, chives, and paprika.
