  • 500ml vegetable oil, for frying
  • 120g mayonnaise
  • 120g plain Greek yogurt
  • 30ml buttermilk or milk
  • 1 tsp dried dill
  • 0.5 tsp garlic powder (for ranch)
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika (for ranch)
  • 5ml fresh lemon juice
  • 6g fresh chives, chopped

Instructions

  1. Prepare Mushrooms: Clean and slice mushrooms, patting them very dry.
  2. Set Up Breading: Prepare flour, egg, and panko mixtures.
  3. Coat Mushrooms: Dredge mushrooms in flour, egg, then panko.
  4. Fry to Perfection: Fry in 180ยฐC oil for 2-3 minutes, until golden.
  5. Drain and Cool: Drain on paper towels.
  6. Make Smoky Ranch: Whisk together ranch ingredients and chill.
  7. Assemble & Garnish: Serve with ranch, chives, and paprika.
