  • 2 Tbsp (30ml) Extra Virgin Olive Oil
  • 250g (9oz) Fresh Mushrooms, Sliced
  • 150g (5oz) Fresh Spinach Leaves, Packed
  • 1 Medium Onion, Finely Chopped
  • 2 Cloves Garlic, Minced
  • 1 tsp (5ml) Smoked Paprika
  • ยฝ tsp (2.5ml) Ground Cumin (Optional)
  • 120g (ยฝ cup) Raw Cashews, Soaked 2 Hours
  • 120ml (ยฝ cup) Water (for Cashew Cream)
  • 1 Tbsp (15ml) Lemon Juice (Fresh)
  • Salt and Pepper, to Taste
  • 2 Tbsp (30g) Toasted Pine Nuts (for Garnish)
  • 2 Tbsp (30g) Fresh Parsley, Chopped (for Garnish)

Instructions

  1. Boil Orzo: Cook orzo in vegetable broth until al dente, then drain.
  2. Sautรฉ Onions: Sautรฉ chopped onion in olive oil until translucent.
  3. Cook Mushrooms & Garlic: Add mushrooms and garlic; cook until browned.
  4. Wilt Spinach & Spice: Add spinach, smoked paprika, and cumin; wilt spinach.
  5. Make Cashew Cream: Blend soaked cashews, water, lemon juice, and salt until smooth.
  6. Combine Sauce & Vegetables: Pour cashew cream into vegetables; simmer to thicken.
  7. Combine Orzo & Sauce: Add orzo to sauce; toss to coat.
  8. Plate & Garnish: Serve with pine nuts and parsley.
  9. Serve Immediately: Enjoy warm.
