Description

This Crockpot Cheesy Chicken, Broccoli & Rice is a comforting and easy dinner recipe perfect for busy weeknights. Tender chicken, broccoli, and rice are simmered in a creamy, cheesy sauce with roasted red pepper flavor.


Ingredients

  • 400g chicken thighs, bite-sized
  • 300g broccoli florets, fresh or frozen
  • 200g long-grain rice, rinsed
  • 600ml low-sodium chicken broth
  • 250ml heavy cream
  • 150g mozzarella cheese, shredded
  • 100g cheddar cheese, grated
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup roasted red pepper puree
  • 2 tbsp toasted sliced almonds, chopped
  • 2 tbsp panko breadcrumbs
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Sautรฉ Aromatics: Sautรฉ onion and garlic in olive oil until softened, then bloom spices.
  2. Layer Ingredients: Combine chicken, broccoli, and rice in a crockpot.
  3. Add Broth: Pour chicken broth over ingredients.
  4. Make Sauce: Whisk together cream, mozzarella, cheddar, and red pepper puree.
  5. Combine & Cook: Pour sauce over ingredients and cook on low for 4-5 hours or high for 2-3 hours.
  6. Add Topping: Sprinkle with almond and panko mixture 30 minutes before end of cooking.
  7. Swirl & Garnish: Drizzle with remaining puree and garnish with parsley.
