Description
This Crockpot Cheesy Chicken, Broccoli & Rice is a comforting and easy dinner recipe perfect for busy weeknights. Tender chicken, broccoli, and rice are simmered in a creamy, cheesy sauce with roasted red pepper flavor.
Ingredients
- 400g chicken thighs, bite-sized
- 300g broccoli florets, fresh or frozen
- 200g long-grain rice, rinsed
- 600ml low-sodium chicken broth
- 250ml heavy cream
- 150g mozzarella cheese, shredded
- 100g cheddar cheese, grated
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 0.5 tsp ground cumin
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.5 cup roasted red pepper puree
- 2 tbsp toasted sliced almonds, chopped
- 2 tbsp panko breadcrumbs
- 2 tbsp fresh parsley, chopped
Instructions
- Sautรฉ Aromatics: Sautรฉ onion and garlic in olive oil until softened, then bloom spices.
- Layer Ingredients: Combine chicken, broccoli, and rice in a crockpot.
- Add Broth: Pour chicken broth over ingredients.
- Make Sauce: Whisk together cream, mozzarella, cheddar, and red pepper puree.
- Combine & Cook: Pour sauce over ingredients and cook on low for 4-5 hours or high for 2-3 hours.
- Add Topping: Sprinkle with almond and panko mixture 30 minutes before end of cooking.
- Swirl & Garnish: Drizzle with remaining puree and garnish with parsley.
