  • 800g (1.75lb) Ripe Tomatoes, chopped
  • 250g (9oz) Ricotta Cheese, full-fat
  • 2 tbsp (30ml) Extra-Virgin Olive Oil
  • 3 cloves Garlic, minced
  • 1 tsp (2g) Smoked Paprika
  • Zest of 1 Lemon
  • 30g (1oz) Pine Nuts
  • Fresh Basil Leaves, torn
  • Salt and Pepper to taste

Instructions

  1. Cook Pasta: Boil pasta until al dente, reserving 120ml pasta water.
  2. Sautรฉ Garlic: Heat olive oil, sautรฉ garlic until fragrant (about 1 minute).
  3. Simmer Sauce: Add tomatoes, salt, pepper, and paprika; simmer for 10-12 minutes.
  4. Prepare Ricotta: Combine ricotta, lemon zest, and 2 tbsp pasta water; mix until smooth.
  5. Combine: Fold ricotta into tomato sauce, adding pasta water to adjust consistency.
  6. Coat Pasta: Add drained pasta to sauce and toss to coat.
  7. Toast Nuts: Toast pine nuts until golden brown.
  8. Serve: Plate pasta, garnish with pine nuts and basil.

Notes

For a richer sauce, use full-fat ricotta. Toasting pine nuts enhances their flavor. Reserve pasta water for a creamy consistency.
