- 2 tbsp olive oil, for sautéing and greasing
- 50g onion, diced, adds savory depth
- 1 clove garlic, minced, for aroma
- 30g za’atar spice blend, for unique flavor
- 30g panko breadcrumbs, for crispy topping
- 15g Parmesan cheese, for umami flavor
- Chives, sliced, for garnish
Instructions
- Preheat & Prepare: Preheat oven to 180°C (350°F) and grease a baking dish.
- Sauté Aromatics: Sauté onion in olive oil until softened, then add garlic.
- Blend Base: Whisk eggs, cottage cheese, milk, salt, pepper, and half the onion-garlic mixture.
- Create Turmeric Swirl: Divide mixture; whisk turmeric into one half.
- Layer & Swirl: Pour plain mixture into dish, drop turmeric mixture on top, and swirl gently.
- Prepare Za’atar Crunch: Combine panko, za’atar, Parmesan, and olive oil.
- Top & Bake: Sprinkle za’atar mixture and remaining onion-garlic over eggs; bake 25-30 minutes.
- Rest, Cut & Serve: Let rest, cut into squares, and serve.
