Ingredients
- 500 g (1 lb) ground beef, halal
- 400 g (14 oz) russet potatoes, diced
- 150 g (5 oz) carrots, diced
- 80 g (3 oz) celery, diced
- 150 g (5 oz) onion, chopped
- 2 cloves garlic, minced
- 1 L (4 cups) low-sodium vegetable broth
- 240 ml (1 cup) whole milk, halal-certified
- 120 ml (ยฝ cup) heavy cream (or halal half-and-half)
- 30 g (2 tbsp) unsalted butter
- 30 g (ยผ cup) all-purpose flour
- 1 tsp smoked chipotle powder
- 150 g (5 oz) sharp cheddar cheese, grated (halal-certified)
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 tbsp olive oil (for garnish)
- 1 tbsp fresh chives, sliced (for garnish)
Instructions
- Brown the Beef: Cook and crumble 1 lb ground beef, drain fat, and transfer to crockpot.
- Make Cheddar Base: Melt butter, whisk in flour, then milk and cream. Add chipotle powder and half the cheddar, stir until melted.
- Layer Ingredients: Add onion, garlic, carrots, celery, and potatoes to the crockpot with beef.
- Add Liquid & Season: Pour in broth, add thyme and bay leaf, season with salt and pepper.
- Slow Cook: Cook on LOW for 6-8 hours or HIGH for 3-4 hours, until vegetables are tender.
- Incorporate Cheese: Stir in cheddar base and remaining cheddar during the last 15 minutes.
- Garnish & Serve: Adjust seasoning, drizzle with chive oil, and sprinkle with chives.
Notes
For a smoother texture, partially blend the soup with an immersion blender after cooking. Remember to remove the bay leaf before serving.
