- Combine Ingredients: In a large bowl, mix creamy peanut butter, powdered sugar, softened butter, and vanilla extract until well combined and a soft, pliable dough forms.
- Roll Balls: Scoop about 1 tablespoon of the mixture and roll into 1-inch balls.
- Chill Balls: Place the peanut butter balls on a parchment-lined baking sheet and chill in the refrigerator for at least 30 minutes to firm up.
- Melt Chocolate: In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until smooth and glossy.
