Description

This Chipotle-Infused Taco Mac is a comforting casserole combining smoky, spicy Tex-Mex flavors with creamy, cheesy goodness. A crispy tortilla crumb topping adds delightful texture, making it perfect for family dinners or potlucks.

  • 400g ground beef (halal-certified)
  • 2 tsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.25 tsp cayenne pepper (optional)
  • 1 cup diced tomatoes, drained
  • 0.5 cup vegetable broth (or halal beef broth)
  • 200g sharp cheddar cheese, grated
  • 100g pepper jack cheese, grated
  • 120ml heavy cream
  • 1 tsp chipotle in adobo puree (halal-certified)
  • Salt and pepper to taste
  • 4 corn tortillas, cut into squares
  • 1 tsp fresh cilantro, chopped
  • 2 tbsp sour cream (or plain yogurt)
  • 1 tbsp lime juice

Instructions

  1. Preheat & Prep: Preheat oven to 180ยฐC (350ยฐF) and grease a baking dish.
  2. Cook Macaroni: Boil macaroni until *al dente*, drain, and set aside.
  3. Sautรฉ Aromatics: Sautรฉ onion until translucent, then add garlic and cook until fragrant.
  4. Brown Beef: Brown ground beef, drain excess grease.
  5. Spice It Up: Season beef with chili powder, cumin, paprika, cayenne (optional), salt, and pepper.
  6. Simmer Sauce: Add tomatoes and broth; simmer for 5 minutes.
  7. Craft Cheese Sauce: Simmer cream and chipotle; whisk in cheeses until smooth.
  8. Combine & Layer: Combine macaroni, beef, and half the cheese sauce; top with remaining sauce.
  9. Prepare Crumb: Toss tortilla squares with oil and paprika; bake until crispy and crush.
  10. Top & Bake: Sprinkle crumb over mac and cheese; bake for 20-25 minutes.
  11. Make Crema: Whisk sour cream, lime juice, and cilantro.
