Description

This Smoky Paprika Cream Swirl Potato & Sausage Chowder is a comforting and flavorful dish, perfect for a chilly evening. It features a creamy potato and sausage base with a beautiful smoked paprika swirl.


Ingredients

  • 500g (2 cups) Potatoes, diced
  • 300g (10.5oz) Chicken Sausage, sliced
  • 1 Medium Onion (150g / 1 cup), diced
  • 2 Celery Stalks (80g / ยฝ cup), diced
  • 2 Carrots (120g / ยฝ cup), diced
  • 2 Cloves Garlic, minced
  • 3 Tbsp (45ml) Olive Oil
  • 4 Cups (960ml) Vegetable Broth
  • 1 Cup (240ml) Milk
  • 1 Cup (240ml) Heavy Cream, divided
  • 1 tsp Smoked Paprika, plus 1 tsp for swirl
  • ยฝ tsp Ground Cumin (optional)
  • Salt and Pepper, to taste
  • 1 tsp Lemon Zest (for swirl)
  • 2 Tbsp (30g) Toasted Chives, for garnish
  • 2 Tbsp (30g) Fried Shallot Strings, for garnish

Instructions

  1. Sautรฉ Aromatics: Sautรฉ onion, celery, and carrots in olive oil until softened.
  2. Brown Sausage: Add sausage and cook until lightly browned.
  3. Add Potatoes & Broth: Add potatoes and vegetable broth; bring to a simmer.
  4. Simmer Until Tender: Simmer until potatoes are fork-tender.
  5. Incorporate Dairy & Seasoning: Stir in milk, ยฝ cup heavy cream, smoked paprika, cumin, salt, and pepper.
  6. Prepare Paprika Cream Swirl: Warm remaining cream, paprika, lemon zest, and salt until thickened.
  7. Serve & Swirl: Ladle chowder into bowls and swirl in paprika cream.
  8. Garnish & Enjoy: Garnish with chives and shallot strings.

Notes

For a smoother texture, partially blend the chowder with an immersion blender. Adjust seasoning to your preference.
