Description

Transform classic French onion soup flavors into a comforting noodle dish with tender halal beef, creamy Gruyère sauce, and a crispy onion crumble. This recipe is a bit of a project, but the rich, savory sweetness is well worth the effort!

Ingredients

Scale
  • 500g (1.1lb) Halal Beef Sirloin, thinly sliced
  • 300g (10.5oz) Wide Egg Noodles
  • 300g (10.5oz) Yellow Onions, thinly sliced
  • 2 Tbsp (30mL) Olive Oil
  • 2 Tbsp (30g) Unsalted Butter
  • 2 Cloves Garlic, minced
  • 1 tsp (5g) Dried Thyme
  • 2 Tbsp (15g) All-Purpose Flour
  • 500mL (2 cups) Low-Sodium Vegetable Broth
  • 250mL (1 cup) Heavy Cream
  • 100g (3.5oz) Halal-Certified Swiss Cheese, grated
  • 50g (1.75oz) Panko Breadcrumbs
  • 1 Tbsp (15g) Melted Butter (for crumble)
  • Salt and Pepper to taste
  • Fresh Thyme Sprigs for garnish

Instructions

  1. Cook Noodles: Boil noodles until al dente, drain, and set aside.
  2. Caramelize Onions: Sauté onions with olive oil and butter for 15-20 minutes until deeply golden.
  3. Bloom Aromatics & Create Roux: Add garlic and thyme to onions, then stir in flour for 2 minutes.
  4. Build Creamy Sauce: Whisk in broth, simmer, then stir in cream and cheese until smooth.
  5. Sear Beef: Sear beef in batches for 2-3 minutes per side.
  6. Combine & Coat: Toss noodles, beef, and half the sauce together.
  7. Prepare Crumble: Combine panko, melted butter, and onions.
  8. Bake Crumble: Bake crumble at 180°C (350°F) for 8-10 minutes.
  9. Assemble & Bake: Transfer to baking dish, drizzle with sauce, and sprinkle with crumble.
  10. Final Bake & Garnish: Bake for 12-15 minutes, garnish with thyme.

Notes

Caramelizing the onions slowly is key to developing a deep, sweet flavor. Thinly slicing the beef against the grain ensures tenderness.
