- Total Time: 90 minutes
- Yield: 6 servings 1x
- Diet: General
Description
Transform classic French onion soup flavors into a comforting noodle dish with tender halal beef, creamy Gruyère sauce, and a crispy onion crumble. This recipe is a bit of a project, but the rich, savory sweetness is well worth the effort!
Ingredients
- 500g (1.1lb) Halal Beef Sirloin, thinly sliced
- 300g (10.5oz) Wide Egg Noodles
- 300g (10.5oz) Yellow Onions, thinly sliced
- 2 Tbsp (30mL) Olive Oil
- 2 Tbsp (30g) Unsalted Butter
- 2 Cloves Garlic, minced
- 1 tsp (5g) Dried Thyme
- 2 Tbsp (15g) All-Purpose Flour
- 500mL (2 cups) Low-Sodium Vegetable Broth
- 250mL (1 cup) Heavy Cream
- 100g (3.5oz) Halal-Certified Swiss Cheese, grated
- 50g (1.75oz) Panko Breadcrumbs
- 1 Tbsp (15g) Melted Butter (for crumble)
- Salt and Pepper to taste
- Fresh Thyme Sprigs for garnish
Instructions
- Cook Noodles: Boil noodles until al dente, drain, and set aside.
- Caramelize Onions: Sauté onions with olive oil and butter for 15-20 minutes until deeply golden.
- Bloom Aromatics & Create Roux: Add garlic and thyme to onions, then stir in flour for 2 minutes.
- Build Creamy Sauce: Whisk in broth, simmer, then stir in cream and cheese until smooth.
- Sear Beef: Sear beef in batches for 2-3 minutes per side.
- Combine & Coat: Toss noodles, beef, and half the sauce together.
- Prepare Crumble: Combine panko, melted butter, and onions.
- Bake Crumble: Bake crumble at 180°C (350°F) for 8-10 minutes.
- Assemble & Bake: Transfer to baking dish, drizzle with sauce, and sprinkle with crumble.
- Final Bake & Garnish: Bake for 12-15 minutes, garnish with thyme.
Notes
Caramelizing the onions slowly is key to developing a deep, sweet flavor. Thinly slicing the beef against the grain ensures tenderness.
