onion ring recipe Paprika Batter With Parsley Dust
- Total Time: 65 minutes
- Yield: 4–6 servings 1x
- Diet: Vegan
Description
This recipe transforms simple onions into irresistible, golden, crispy onion rings with a fragrant smoked paprika batter and a vibrant parsley dust. It’s a perfect family-friendly side dish that’s surprisingly easy to make and naturally vegan.
Ingredients
- 2–3 medium large yellow onions (around 600-750g), sliced 0.25-inch (6mm) thick
- 1 cup (120g) all-purpose flour
- 0.25 cup (30g) cornstarch
- 1 tbsp (15g) smoked paprika
- 1 tsp (5g) garlic powder
- to taste salt (start with 0.5 tsp)
- to taste freshly ground black pepper (start with 0.25 tsp)
- 1 tsp (5g) baking powder
- 1 cup (240ml) cold seltzer water or sparkling water
- 0.25 cup fresh parsley, finely chopped
- 3–4 cups (700-950ml) vegetable oil, for frying
Instructions
- Slice and Soak Onions: Slice onions into 0.25-inch (6mm) rings. Separate rings and soak in ice water for 30 minutes to reduce harshness and improve crispiness. Drain and pat dry thoroughly.
- Prepare Parsley Dust: Finely chop fresh parsley. For intense flavor, lightly toast in a dry skillet over medium-low heat for 1-2 minutes until fragrant, then cool. Set aside.
- Whisk the Batter: In a large bowl, combine flour, cornstarch, smoked paprika, garlic powder, salt, pepper, and baking powder. Gradually whisk in cold seltzer water until smooth (like thin pancake batter) with a few small lumps, do not overmix.
- Heat Oil: Pour 3-4 inches (7-10cm) of vegetable oil into a heavy-bottomed pot. Heat over medium-high heat to 350-375F (175-190C). Use a thermometer to ensure accuracy.
- Dip and Fry: Dip each dried onion ring into the Paprika Batter, letting excess drip off. Carefully place 3-4 coated rings into the hot oil (do not overcrowd). Fry for 2-3 minutes per side until golden brown and crispy.
- Drain and Dust: Remove fried rings with a slotted spoon and transfer to a wire rack over paper towels to drain. While still hot, generously sprinkle with parsley dust.
- Serve Hot: Serve your homemade onion rings immediately with your favorite dipping sauces for the best crispy experience.
Notes
For a healthier option, use an air fryer (spray lightly with oil, air fry at 375F for 10-15 minutes, flipping halfway). Alternatively, bake on a greased sheet pan at 400F for 20-25 minutes. For a spicy kick, add 0.5 tsp cayenne pepper to the batter. Toasting the parsley enhances its flavor and color for the dust. Store onions in a cool, dark place.
