Instructions

  1. Slice and Soak Onions: Slice onions into 0.25-inch (6mm) rings. Separate rings and soak in ice water for 30 minutes to reduce harshness and improve crispiness. Drain and pat dry thoroughly.
  2. Prepare Parsley Dust: Finely chop fresh parsley. For intense flavor, lightly toast in a dry skillet over medium-low heat for 1-2 minutes until fragrant, then cool. Set aside.
  3. Whisk the Batter: In a large bowl, combine flour, cornstarch, smoked paprika, garlic powder, salt, pepper, and baking powder. Gradually whisk in cold seltzer water until smooth (like thin pancake batter) with a few small lumps, do not overmix.
  4. Heat Oil: Pour 3-4 inches (7-10cm) of vegetable oil into a heavy-bottomed pot. Heat over medium-high heat to 350-375F (175-190C). Use a thermometer to ensure accuracy.
  5. Dip and Fry: Dip each dried onion ring into the Paprika Batter, letting excess drip off. Carefully place 3-4 coated rings into the hot oil (do not overcrowd). Fry for 2-3 minutes per side until golden brown and crispy.
