  • 3 cups vegetable stock
  • 1 tsp sea salt
  • 0.8 cup plain full-fat Greek yogurt
  • 1 tbsp Za’atar spice blend, plus extra for garnish
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley, plus extra for garnish

Instructions

  1. Sear Chicken: Heat half the olive oil in a large skillet over medium-high heat. Sear chicken pieces in batches until lightly browned on all sides, about 3-4 minutes per batch. Transfer seared chicken directly to the slow cooker insert.
  2. Sautรฉ Aromatics: Add remaining olive oil to the skillet. Sautรฉ diced onion for 5 minutes, scraping up browned bits. Stir in garlic, cumin, paprika, and turmeric; cook for 1 minute until fragrant.
  3. Combine Ingredients: Transfer the onion mixture from the skillet into the slow cooker insert. Add carrots, potatoes, black pepper, bay leaf, vegetable stock, and sea salt. Stir gently to combine all ingredients.
  4. Slow Cook Stew: Cover and cook the stew on LOW for 6-8 hours or on HIGH for 3-4 hours, or until the chicken is fork-tender and the vegetables are cooked through. Remove the bay leaf before serving.
  5. Prepare Yogurt Swirl: While the stew cooks, combine yogurt, Za’atar blend, lemon juice, and chopped parsley in a small bowl; mix well. Cover and refrigerate until ready to serve.
