Description

This recipe offers a gourmet twist on classic mini bagel bites by adding a spicy gochujang glaze and tangy kimchi. It makes for a quick and flavorful snack or appetizer, perfect for game day or a family movie night.

Ingredients

Scale
  • 12 mini bagels, sliced in half
  • 120 g (1/2 cup) tomato paste
  • 30 g (2 tablespoons) gochujang (Korean chili paste)
  • 15 ml (1 tablespoon) honey
  • 10 ml (2 teaspoons) soy sauce
  • 1 large garlic clove, minced
  • 100 g (1/2 cup) chopped kimchi, well-drained
  • 150 g (1 1/2 cups) shredded low-moisture mozzarella cheese
  • 50 g (1/2 cup) shredded provolone cheese
  • 2 scallions, thinly sliced

Instructions

  1. Prep Oven and Bagels: Preheat oven to 400ยฐF (200ยฐC). Arrange the 24 mini bagel halves cut-side up on a parchment paper-lined baking sheet.
  2. Prepare Glaze: Whisk together the tomato paste, gochujang, honey, soy sauce, and minced garlic in a small bowl to form the spicy glaze.
  3. Assemble Bagel Bites: Spread about 1 teaspoon of the glaze over each bagel half. Top with chopped, drained kimchi, pressing gently into the sauce. Sprinkle generously with the mozzarella and provolone cheeses.
  4. Bake and Serve: Bake for 8 to 12 minutes, or until the cheese is melted, bubbly, and slightly golden at the edges. Cool for 2-3 minutes before serving, then garnish with sliced scallions.

Notes

For best results, make sure the kimchi is well-drained and chopped finely to prevent sogginess. Use low-moisture cheeses to ensure the bagels remain crisp during baking. To make ahead, assemble completely, flash freeze, and store in a freezer bag for up to 3 months; bake from frozen, increasing the cook time slightly.
