Ingredients
- 1 large loaf Italian bread or baguette (approx. 400g / 14 oz)
- 1 whole head garlic
- 15 mL / 1 tablespoon olive oil
- 115g / 1/2 cup unsalted butter, softened
- 120g / 4 oz full-fat cream cheese, softened
- 2 sprigs fresh rosemary, leaves finely chopped (about 2 tablespoons)
- 200g / 7 oz shredded mozzarella cheese
- 50g / 1.7 oz grated Parmesan cheese
- 2.5 mL / 1/2 teaspoon fine sea salt, plus more to taste
- 1.25 mL / 1/4 teaspoon freshly ground black pepper, plus more to taste
- 1 sprig fresh rosemary, for garnish
Instructions
- Roast the Garlic: Preheat oven to 200ยฐC / 400ยฐF. Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until soft. Squeeze out cloves and mash thoroughly.
- Prepare Creamy Filling: In a medium bowl, combine the mashed roasted garlic with softened cream cheese, finely chopped rosemary, salt, and pepper. Mix until smooth.
- Butter the Bread: Slice the bread lengthwise into two halves. Spread softened butter (optionally mixed with extra salt and pepper) evenly over the cut surfaces of both halves.
- Layer Filling and Cheese: Spread the creamy filling evenly over the buttered bread halves. Top generously with shredded mozzarella and grated Parmesan cheese. Place on a baking sheet.
- Bake Until Golden: Bake for 15-20 minutes, or until the cheese is melted and bubbly and the bread edges are golden brown. Broil for 1-2 minutes for a crispier crust, watching closely to prevent burning.
- Slice and Serve: Let the cheesy bread cool for 5 minutes before slicing into pieces. Garnish with additional fresh rosemary and serve immediately.

To ensure a crispy crust on the bottom, place the bread halves directly on the oven rack for the last few minutes of baking. Make sure to use truly softened cream cheese for easy mixing. For a spicier flavor, add red pepper flakes to the creamy filling.
