  • 4 high-quality hoagie rolls
  • 30 g (2 tbsp) unsalted butter (for cheese base)
  • 20 g (2 tbsp) all-purpose flour (for thickening)
  • 240 mL (1 cup) whole milk (for creamy sauce; or 2% milk)
  • 200 g (7 oz) sharp cheddar cheese, grated (for melty drizzle; or mild cheddar)
  • 5 g (1 tsp) smoked paprika (for smoky depth)
  • Pinch of cayenne pepper (optional kick)
  • 15 g (0.5 oz) fresh chives or flat-leaf parsley (for garnish)

Instructions

  1. Roast Garlic: Preheat oven to 200ยฐC (400ยฐF). Slice the top off the whole head of garlic, drizzle with 15 mL (1 tbsp) olive oil, and wrap it in foil. Roast until soft and caramelized, about 30-40 minutes. Mash the pulp.
  2. Sear Beef: Heat 15 mL (1 tbsp) vegetable oil in a large cast-iron skillet over high heat until shimmering. Spread half of the thinly sliced beef in the skillet. Cook until browned, about 1-2 minutes. Season with salt and pepper, chop, and flip until cooked through, another 1-2 minutes. Transfer the cooked beef to a plate and repeat with the remaining beef.
  3. Caramelize Onions & Combine: Reduce skillet heat to medium-high. Add the sliced onion to the skillet, scraping up any browned bits. Cook until softened and caramelized, about 8-10 minutes. Season with salt and pepper. Return the cooked beef to the skillet and mix with the onions. Keep warm.
  4. Make Cheese Sauce Base: In a medium saucepan, melt 30 g (2 tbsp) unsalted butter. Whisk in 20 g (2 tbsp) all-purpose flour and cook for 1 minute. Whisk in 240 mL (1 cup) whole milk until smooth and thickened, about 2-3 minutes.
  5. Finish Cheese Drizzle: Reduce heat to low. Add the grated sharp cheddar cheese, mashed roasted garlic, smoked paprika, and optional cayenne pepper to the saucepan. Stir until the cheese melts and the sauce is smooth and creamy. Season to taste. Keep warm. (If the drizzle is too thick, whisk in 1-2 tbsp extra milk until desired consistency.)
  6. Toast Hoagie Rolls: Preheat broiler. Slice hoagie rolls lengthwise. Lightly toast them under the broiler until golden brown and crispy, about 1-2 minutes. Watch carefully to prevent burning.
