  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon fine sea salt

  • 0.5 cup maple syrup (or honey)
  • 0.25 cup naturally brewed soy sauce (no alcohol)
  • 2 tablespoons rice vinegar (no alcohol, or white vinegar)
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1 teaspoon red chili flakes, plus extra for garnish
  • 1 small star anise pod
  • 0.25 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1 fresh orange (for zest)
  • 0.25 cup fresh cilantro, finely chopped

Instructions

  1. Prep Your Wings: Preheat oven to 400F (200C). Line a large baking sheet with parchment paper and place an oven-safe wire rack on top. In a large bowl, combine the very dry chicken wings with baking powder, salt, and black pepper. Toss well until evenly coated.
  2. Arrange Wings for Baking: Arrange the seasoned wings in a single layer on the wire rack, ensuring they do not touch.
  3. First Bake Wings: Bake wings for 45-50 minutes, flipping halfway through, until golden brown and crispy (internal temperature 165F (74C)).
  4. Prepare Glaze: While wings bake, combine orange juice, maple syrup, soy sauce, rice vinegar, grated ginger, minced garlic, red chili flakes, star anise pod, and ground cinnamon in a medium saucepan. Bring to a simmer over medium heat, stirring occasionally, then reduce to low and simmer for 10 minutes. Remove star anise. Whisk cornstarch and cold water to make a slurry; slowly whisk into simmering glaze. Simmer and whisk for 1-2 minutes until thick and glossy.
  5. Glaze and Final Bake: Remove wings from oven. In a large clean bowl, add hot wings and pour thickened glaze over them. Toss gently until thoroughly coated. Return glazed wings to the wire rack and bake for an additional 8-10 minutes, or until glaze is deeply caramelized and stickier. Watch closely to prevent burning. Let wings rest on the rack for 5 minutes after baking to allow glaze to set.
