  • 240 ml filtered water
  • 60 ml pure maple syrup, or sugar-free maple-flavored syrup
  • 25 g fresh ginger, peeled and thinly sliced or grated (or 1 to 2 teaspoons pre-minced)
  • 2 large cinnamon sticks
  • 3 whole star anise pods, for infusing
  • 0.25 teaspoon ground nutmeg
  • 5 ml alcohol-free vanilla extract
  • 400 ml full-fat coconut cream, from chilled can
  • 30 g powdered sugar
  • 30 g pecans, toasted and finely chopped (for garnish)
  • 20 g candied ginger, finely diced (for garnish)
  • 3 to 5 whole star anise pods, for garnish

Instructions

  1. Combine Ingredients: In a medium saucepan, combine the apple juice, filtered water, maple syrup, thinly sliced fresh ginger, cinnamon sticks, 3 whole star anise pods, ground nutmeg, and alcohol-free vanilla extract. Stir gently to mix.
  2. Simmer and Steep Flavors: Bring the mixture to a gentle simmer over medium heat (prevent vigorous boil). Reduce heat to low and simmer very gently for 10 minutes. Remove from heat, cover, and let steep for an additional 15 minutes for intense spice infusion.
  3. Whip Coconut Cream: While the drink steeps, scoop the thick coconut cream from the chilled can into a cold mixing bowl. Add the powdered sugar. Using an electric mixer, whip on high speed until light and fluffy with distinct white peaks. (If coconut cream doesn’t whip well, chill bowl and beaters for 15 minutes beforehand.)
  4. Strain and Garnish: Strain the warm apple pie drink through a fine-mesh sieve into a heatproof pitcher or mugs, discarding all solids. Pour into mugs, dollop generous spoonfuls of fluffy coconut whipped cream on top.
