Instructions

Make the Filling: In the prepared dish, add 300 g pecan halves, 1 cup (200 g) light brown sugar, 0.33 cup (80 ml) maple syrup, 0.25 teaspoon (1 g) ground cardamom, 0.25 teaspoon (1.5 g) fine sea salt, 1 cup (240 ml) hot water, and 2 teaspoons (10 ml) alcohol-free vanilla extract. Stir gently until combined and shiny.
  3. Mix the Topping Dry: In a large bowl, whisk together 2 cups (250 g) all-purpose flour, 0.33 cup (75 g) granulated sugar, 2 teaspoons (10 g) baking powder, the remaining 0.25 teaspoon (1 g) ground cardamom, and 0.25 teaspoon (1.5 g) fine sea salt. Cut the remaining 0.25 cup (60 g) cold unsalted butter into small cubes, add to the dry mix, and cut in until coarse crumbs form.
  4. Form Topping Batter and Assemble: Gradually add 0.75 cup (180 ml) whole milk, stirring just until a soft, shaggy dough forms. Do not overmix (lumps are fine). Drop spoonfuls of this dough evenly over the pecan mixture.
