maple fudge recipe With Toasted Pecan Swirl
- Total Time: 245 minutes
- Yield: 36 pieces 1x
- Diet: General
Description
This rich maple fudge with toasted pecan swirl offers a perfect balance of creamy texture and delightful crunch, making it a special yet easy sweet treat. It’s a fantastic choice for family dessert or a thoughtful homemade gift.
Ingredients
- 1 cup pure maple syrup
- 1.5 cups granulated sugar
- 0.5 cup heavy cream
- 0.25 cup unsalted butter
- 1 tsp vanilla extract
- 0.5 cup toasted pecans
- 0.25 tsp salt
Instructions
- Prep Pecans: Toast pecans in a dry 10-inch skillet over medium heat for 3-5 minutes until they become fragrant and lightly golden. Set aside to cool.
- Combine Ingredients: In a heavy-bottomed saucepan, combine the pure maple syrup, granulated sugar, heavy cream, unsalted butter, and salt. Stir gently over medium heat until the sugar completely dissolves.
- Boil to Soft Ball Stage: Bring the mixture to a rolling boil without stirring. Cook until it reaches 238-240ยฐF (114-116ยฐC) on a reliable candy thermometer.
- Cool Unstirred: Remove the pan from the heat. It’s crucial not to stir it now. Let it cool completely in the pan to lukewarm, around 110ยฐF (43ยฐC). This can take 1-2 hours.
- Beat & Swirl: Once cooled, add the vanilla extract. Beat the mixture vigorously with a wooden spoon or a stand mixer until it thickens, loses its glossy sheen, and starts to set. Fold in the toasted pecans, swirling gently to create a beautiful pattern.
- Set: Pour the mixture into a greased 8×8 inch pan. Smooth the top evenly with a spatula. Chill for at least 2 hours, or until firm enough to cut cleanly.
Notes
For sugar-reduced options, use an erythritol/xylitol blend (texture may vary). Grainy fudge often results from stirring too much during cooling or incorrect temperature. This dessert is adaptable for dietary needs, and kids can help with swirling pecans.
