- 1 cup raw cashews
- 4–6 large Medjool dates, pitted
- 1 tsp pure vanilla extract
- 3–4 cups filtered water

Instructions
- Soak Cashews: For best results, soak raw cashews in filtered water for at least 4 hours or overnight. For a quick soak, cover cashews with boiling water and let sit for 15-30 minutes, then drain and rinse well.
- Combine Ingredients: Add the soaked (and drained) cashews, pitted Medjool dates, vanilla extract, sea salt, and 3-4 cups of fresh filtered water to a high-speed blender.
- Blend Until Smooth: Start blending on low, gradually increasing to high speed. Blend for 1-2 minutes, or until the mixture is completely smooth and creamy with no grit. Blend for an additional 30 seconds if any lumps remain.
- Strain for Creaminess: Pour the blended cashew milk through a fine-mesh sieve lined with cheesecloth or a nut milk bag over a large bowl.
- Extract Liquid: Gently squeeze the bag to extract all the liquid, leaving behind any pulp, ensuring a silky-smooth homemade cashew milk.
Notes
For best flavor and creaminess, use organic, raw, unsalted cashews and plump Medjool dates. Adjust dates for sweetness. For different flavors, add cinnamon, nutmeg, cardamom, or coconut flakes. Cashew milk naturally separates; shake well before serving. For a richer consistency, use less water. If too gritty, blend longer or ensure cashews are well-soaked. For lower sugar or keto/low-carb, omit dates and use stevia or erythritol.
