1 lb meatloaf recipe With Ketchup Glaze Stripe
- Total Time: 80 minutes
- Yield: 4 servings 1x
- Diet: General
Description
This easy 1 lb meatloaf recipe features lean ground beef, a classic blend of seasonings, and a tangy-sweet ketchup glaze. It’s a comforting, juicy, and flavorful meal perfect for a family weeknight dinner.
Ingredients
- 1 lb lean ground beef (80/20 recommended)
- 0.5 cup breadcrumbs (plain or panko)
- 1 large egg
- 0.25 cup milk (whole or 2 percent)
- 0.25 cup finely diced onion
- 1 tsp garlic powder
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.5 cup ketchup
- 2 tbsp brown sugar
- 1 tsp apple cider vinegar
Instructions
- Preheat Oven: Preheat your oven to 350(degrees)F (175(degrees)C).
- Combine Ingredients: In a large bowl, gently combine the ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, and pepper. Mix just until everything is combined and uniform in color (do not overmix or your meatloaf will be tough).
- Form Loaf: Form the mixture into an oblong loaf shape, approximately 8×4 inches (20×10 cm), on a foil-lined baking sheet or in a 9×5 inch loaf pan.
- Prepare First Glaze: In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar. Spread half of this glaze evenly over the top of the meatloaf.
- First Bake: Bake the meatloaf for 30 minutes.
- Apply Second Glaze and Finish Baking: Remove the meatloaf from the oven. Carefully apply the remaining ketchup glaze over the top. Return to the oven and bake for another 20-30 minutes, or until the internal temperature reaches 160(degrees)F (71(degrees)C) when checked with a meat thermometer.
- Rest Meatloaf: Rest the meatloaf for 10 minutes before slicing.
Notes
Sautรฉ diced onion before adding for extra flavor. Avoid overmixing or overcooking to prevent dry, tough meatloaf; gentle handling is key for tender results. If mixture feels too wet, add more breadcrumbs; if falling apart, ensure enough binder like egg and breadcrumbs.
